Pancake Day

Happy Pancake Day everyone!

For me, the best pancakes are the crêpe versions soaked in lemon and sprinkled in sugar (the real stuff, not icing sugar) rather than your typical fluffy American style … but whatever your preference I think pancakes should be eaten more often than once a year for sure.

When we were kids my mum made pancakes for dinner roughly once a week and if we ever got a say in what we were having for dinner, it was always pancakes.

And so today I’m going to share with you my mum’s pancake recipe. It’s super simple, ridiculously easy and by far the tastiest I’ve tried (and believe me, I’ve tried and tested a lot). Enjoy!

Mum’s Joyful Pancakes


• 1 cup plain flour
• 1 egg
• pinch salt
• 1 1/4 cups milk

To Make

1. Sift flour, then mix all ingredients together
2. Leave to sit for up to 1 hour
3. Heat the pan and butter it lightly
4. Pour a ladle of batter into the pan and swirl the batter to coat the entire surface
5. Cook over medium heat until the crêpe starts to brown at the edges, then flip
6. Keep them warm in the oven until you’re ready to eat!

To Eat

• Cover in loads of lemon juice and a generous sprinkling of sugar. If you feel like spicing it up try mixed berries, bananas, Madagascan Vanilla ice-cream and a little squeeze of lemon and sugar to top it all off.
• Finally, remember to lick your fingers and murmur lots of appreciative noises while eating. Mmmmmm!
